Lunch/Dinner Idea 😋

So, I wanted to try something different for dinner the other night, and I treated the parents to "Stuffed Sweet Potato Boats." The "stuffing" in the "boats" is ground beef sautéed with onions, green, yellow and red peppers, garlic, corn, tomato sauce, salsa, pepper, paprika, and oregano. Coat the potatoes with olive oil, salt and pepper and bake/roast them until fork tender. Then, cut in half, scoop out a bit of the sweet potato and add the scooped goodness into the ground beef. Spoon ground beef mixture into the potatoes and top with feta cheese crumbles. Delicious!!

I make Cauliflower salad. It's a recipe passed down from my mother. You can substitute ingredients for a more health option.

1 head Cauliflower (chopped in small pieces),

1 head of Lettuce (substitute with spinach)

1 small onion chopped fine

I pack bacon, chopped ( substitute turkey bacon)

1/3 c sugar (substitute stevia)

1/2 cup Mayo

1/4 cup Parm cheese

Layer in that order. Toss just before serving. Enjoy!

Great Tuesday!

Fondue at home. Not only is it cost effective but I can pick what goes in. A glass of red wine once in awhile if you fancy! 'Sometimes' foods!
